Ingredients

  • 12 large eggs
  • ½ cup sour cream, mayonnaise, or a combination of both
  • ½ teaspoon Dijon mustard
  • 6 green olives, finely minced (optional)
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon Crystal® Hot Sauce
  • 1 tablespoon chopped fresh parsley
  • ½ stalk celery, finely minced
  • Sweet paprika
  • Black olives (optional Halloween garnish)

How to Cook Perfect Hard-Cooked Eggs

Place the eggs into the saucepan.

Add one teaspoon of filtered water for each egg.

Cover the pan.

Open the Ultra-Temp® Control and Whistle Vent.

Cook over medium heat (approximately 275°F).

Soft-Cooked Eggs

When the whistle sounds:

  • Close the vent.
  • Reduce heat to LOW (175°F).
  • Cook exactly 7 minutes.
  • Serve immediately.

Hard-Cooked Eggs

When the whistle sounds:

  • Close the vent.
  • Reduce heat to LOW (175°F).
  • Continue cooking for approximately 15 minutes.

Cooling the Eggs

Remove the cover.

Place the saucepan under cold running water for one to two minutes, or fill the pan with cold water and ice.

Allow the eggs to cool for 10–15 minutes.

Easy-to-Peel Eggs

Crack the wider end of each egg against a flat surface.

Gently peel downward while rinsing under cool water if necessary.

How to Make Angelic Deviled Eggs

Slice each egg lengthwise.

Remove the yolks and place them in a mixing bowl.

Arrange the whites on a serving platter.

Mash the yolks until smooth.

Mix in:

  • Sour cream and/or mayonnaise
  • Dijon mustard
  • Celery
  • Green olives
  • Crystal® Hot Sauce
  • Fresh parsley
  • Black pepper

Blend until creamy.

Fill each egg white with the yolk mixture using a spoon or pastry bag.
