There was nothing quite like summer 

The moment warm weather arrived, life moved outdoors. Days were spent swimming in the pool, playing in the neighborhood park, fishing in the river, or drifting off to sleep on the porch during those long, humid nights that only summers could deliver. But of all the memories that remain vivid after so many years, the moments we treasure most were our legendary family picnics held each Memorial Day, Fourth of July, and Labor Day.

Cucumber and Onion Salad.

This crisp, tangy salad became his signature contribution to every summer gathering. Made with cucumbers he proudly grew in our backyard garden, the dish was cool, refreshing, and perfectly suited for hot summer afternoons. Its vinegar bite, balanced with a touch of sweetness and fresh onions, made it impossible to resist.

Chill Time: 1 hour

Equipment:

  • French chef’s knife or mandolin food cutter
  • Cutting board
  • Large salad bowl

INGREDIENTS

  • 2 large cucumbers, washed and scored (not peeled), sliced ¼-inch thick
  • 1 medium white onion, sliced ¼-inch thick or julienned
  • ½ red onion, sliced ¼-inch thick or julienned
  • 1 teaspoon sugar
  • ½ cup distilled white vinegar
  • 1 tablespoon olive oil
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon chopped fresh parsley

DIRECTIONS

  1. In a large mixing bowl, combine the cucumbers, white onion, red onion, sugar, vinegar, and olive oil.
  2. Cover and refrigerate for at least one hour to allow the flavors to blend.
  3. Before serving, drain the liquid and reserve it.
  4. Arrange the cucumber and onion slices on individual salad plates and drizzle each serving with about 1 tablespoon of the reserved liquid.
  5. Garnish with freshly ground black pepper and fresh parsley.

Serving Suggestion
