Waterless Silver Queen Corn on the Cob Recipe

EQUIPMENT

  • Health Craft 5-Quart Stockpot with Ultra-Temp® Lid
  • Chef's Knife

INGREDIENTS

  • 4 ears fresh  Silver Queen Sweet Corn (in the husk)

DIRECTIONS

  1. Remove the husks and silk from each ear.
  2. Place 6–8 clean corn husks in the bottom of the stockpot to prevent the natural sugars from scorching.
  3. Arrange the corn on top of the husks. If desired, cut each ear in half or into 1-inch wheels so the pot is nearly full.
  4. Rinse the corn with filtered water, then pour off almost all of the water. The moisture clinging to the corn and husks is sufficient for waterless cooking.
  5. Cover with the Ultra-Temp® Lid. Open the control and whistle valve. Heat over medium heat (240–270°F / 116–132°C) until the whistle sounds.
  6. Close the Ultra-Temp® control and whistle valve. Once the Ultra-Seal® forms, reduce heat to low (150–174°F / 66–79°C) and cook 15–20 minutes.
  7. Do not lift the lid during cooking. Breaking the Ultra-Seal® increases cooking time and reduces efficiency.
  8. If additional cooking is needed, add 2 tablespoons of water around the rim, reseal, and continue cooking another 5–10 minutes over low heat.

Serve immediately with a small amount of unsalted butter (optional) and a light sprinkle of kosher salt.
