·       Salt and pepper, to taste

·       ½ teaspoon smoked paprika (optional)

For the Vegetables:

·       1 red bell pepper, thinly sliced

·       1 yellow bell pepper, thinly sliced

·       1 zucchini, sliced into rounds

·       1 small red onion, thinly sliced

·       2 cups fresh spinach

·       2 cloves garlic, minced

·       1 tablespoon olive oil

How to Make This Recipe

Step 1: Prepare the Chicken Season the chicken breasts with garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Heat a tablespoon of olive oil in a large skillet over medium- heat. Once the pan is heated, add the chicken breasts and cook for about 6-7 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C). Remove the chicken from the skillet and set it aside to rest.

Step 2: Sauté the Vegetables In the same skillet, add another tablespoon of olive oil. Add the sliced onions, bell peppers, zucchini, and garlic. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables are tender and starting to caramelize.

Step 3: Add the Spinach Once the vegetables are cooked, add the spinach to the skillet and stir it in. Continue to cook for an additional 1-2 minutes, until the spinach wilts down.

Step 4: Slice the Chicken While the vegetables are cooking, slice the chicken breasts into thin strips or bite-sized pieces. Once the chicken is cooked through, add it back to the skillet with the vegetables.
